Hexanal, a C-6 aldehyde is known as volatile compound and has antimicrobial properties that can be used in both spray and vapour forms for antifungal protection of fruit and vegetables. It is evident from eariler studies that elevation of hexanal was not detectectable in fruits after 48 hrs. of application of hexanal. Considering this, the present study was aimed to detect the efficacy of hexanal applications on chemical and volatile profiles of strawberry 'Florida Fortuna' cultivar. The efficiacy of three hexanal doses (0%, 0.01% 0.02%) were studied in strawberry before and after harvest. Effectivenes of hexanal treatment on organic acids content and volatiles of 'Florida Fortuna' strawberry fruits were evaluated during 15 days storage life. Pre-harvest spray and postharvest vapour hexanal treatments positively influenced the quality of strawberry 'Florida Fortuna'.
